It was busy on the Washington, D.C., Convention Center floor this past weekend as thousands of people explored the NBC4 Health and Fitness Expo.
The Redskins hosted a booth where kids could pose for photos and run football drills while learning about the team’s programs.
Redskins executive chef Jon Mathieson and team nutritionist Rob Skinner also hosted a cooking demonstration for fans, preparing a meal players would typically receive in cafeteria at Redskins Park in Loudoun County, Va.
Mathieson cooked up a Cobia entrée with broccoli raab, shitake mushrooms and Farrell grains, offering a variety of vegetables, which he joked are sometimes difficult to feed to hungry football players.
“It was a typical dish we’d do at the park for the players and coaches,” Mathieson said. “You want to use some green vegetables, get a great starch, and a nice piece of fish or meat on the lean side.”
